Olive oil biscuits - recipe

Did you know that one of the most traditional Portuguese products is olive oil?
Yes, olive oil is considered by many as "liquid gold".
And we have the best olive oil in the world!
Ok, Ok, one of the best.

It's quite a traditional culture of Portugal and we are very proud of it!
There are numerous ways of using it, may it be just to season salads, hot with garlic to season grilled cod fish or on any of our traditional foods.

But today I bring you a recipe for those who have a sweet tooth, olive oil biscuits.

This is a traditional recipe from the part of the country that as seen some of my family grow. It is actually one of the recipes of my grandmother, my father's mother, and she used to make them for me when I would come to visit. In those days, all families had a small lot of land, where they had a little bit of everything and the olive oil used was always from our own trees and work.

Olive Oil Biscuits (Biscoitos de azeite)

  • 8 eggs (5 all eggs + 3 egg yolks) 
  • 250 g of sugar 
  • 2,5 dl of olive oil 
  • 1,100 kg of flour (approx.) 
  • 1 dessert spoon of cinnamon 
  • Sugar and cinnamon to sprinkle 
  • 1 egg to help get them golden brown 

1. Preheat the oven to 180ºC (350ºF).
2. Beat eggs and egg yolks with the sugar and cinnamon. Add the olive oil and keep beating. Add flour,  little by little, and keep beating until you have a dough that you can mold with your hands.
3. Make S shaped biscuits with the help of floured hands, they should be fat.
4. Place on a lined baking tray, brush them with with egg, beaten, if desired sprinkle with sugar and cinnamon and bake in oven at 180°C for about 20 minutes or until golden brown.
