Although I have a sweet tooth, today I’m going to talk to you about Quiche, an open-faced pastry crust dish with a filling of tasty custard with cheese, meat, fish or vegetables.

You must have heard about the famous Quiche Lorraine or the Quiche au Fromage (quiche with cheese), Quiche Aux Champignons (quiche with mushrooms), Florentine (spinach)... Today I’m sharing with you my home baked Quiche, with my favorite ingredients.

I usually buy the fresh dough for this French pie in the supermarket, unfortunately I seldom have the time to do the pastry at home…

The funny thing is that the filling is so easy to do and you can put a lot of ingredients in it!

You can start by “sauté” some onions, leek, garlic, red peppers and olive oil in a frying pan, with a pinch of salt. Then you can add some bacon and some little pieces of cooked chicken (if you like meet). If you’re a vegetarian, you can always put some vegetable or soy sausages and that will be great too!

Don’t forget to preheat the oven to 180 degrees.

I always love to add some previously cooked vegetables, like green beans, corn, spinach or even broccoli… they will taste divinely!

I usually don’t worry about the quantities: when you finish adding all the ingredients your frying pan should be filled to the top with this lovely mixture. You can then taste it and season with a little bit of chili powder or extra salt.

Place the pastry in a 24 cm quiche dish and fill it with this mixture. Then, whisk 3 eggs with some cream, milk or even with some plain yogurt and generously pour it over the mixture.

Take it to the oven, wait for about 45 minutes or until the top is golden…

You can eat your Quiche hot or cold with a fresh salad or beautiful rice!
